Ventia is seeking experienced Trade Cooks to join our Defence Base Services contract in Darwin, Northern Territory, where you’ll play a crucial role in supporting upcoming exercises. This dynamic position offers the opportunity to work in a fast-paced environment with a rotating 7-day roster, including weekend shifts. You’ll be involved in bustling breakfast, lunch, and dinner services, along with exciting functions during peak periods.

Key Responsibilities:
- HACCP Expertise: Take charge of managing food safety hazards, ensuring compliance through systematic HACCP controls, and maintaining a safe, high-quality food environment.
- Cooking Mastery: Operate large-volume cooking equipment such as grills, deep-fat fryers, and barbecues, producing meals for large groups with precision and efficiency.
- Training & Leadership: Mentor and train all food production personnel, imparting Broadspectrum’s high standards and procedures, including dietary-specific meal services such as Kosher and Halal.
- Team Collaboration: Build strong working relationships with the performance and compliance team, ensuring top-notch management of Health, Safety and Environment (HSE), Food Safety, HACCP, and contract compliance.
- Kitchen Excellence: Maintain the cleanliness, sanitation, and overall upkeep of the kitchen, ensuring all areas are pristine and presentable.

Position Requirements:
- Australian-recognised Commercial Cookery qualification – a strong culinary foundation.
- HACCP Level 3 certification (preferred) – for a higher standard of food safety management.
- Proven understanding of contract management, quality systems, and continuous improvement practices.
- Comprehensive knowledge of Food Safety Standards and statutory obligations, ensuring strict compliance.
- Passion for customer service – a commitment to delivering high standards in every meal and interaction.
- Strong planning and organisational skills, with proven experience working collaboratively in a professional setting.
- Excellent communication skills – both verbal and written, enabling smooth operations within your team and with stakeholders.
Special Conditions:
- Must be an Australian Citizen or Permanent Resident with full working rights.
- An Australian Federal Police Check is required for this role.
