About the role
Ventia in partnership with the Australian Defence Force are seeking a Sous Chef to join our team in Woomera, South Australia. The Sous Chef will assist in managing the overall kitchen and back of house operations to ensure we deliver great food and customer service to the Defence personnel and their families based in Woomera. The Sous Chef will be responsible for the ELDO Hotel, Heritage Café and other locations as required.
What we offer:
- Permanent full-time role in Woomera working a rotating roster.
- Hourly base rate: $29.64 + 11.5% super.
- Chef Market Allowance: $7.40 per worked hour.
- Woomera Location Allowance: +10% of base rate per hour.
- Tool Allowance: $2.11 per day/shift.
- Accommodation is provided in Woomera.
Responsibilities include (but are not limited to):
- Manage the overall preparation and delivery of meal services, ensuring regular consultation with Hotel & Retail Manager and Front of House Supervisor regarding expectations and performance.
- Train all food production personnel in Ventia’s procedures and methods relating to food preparation and presentation, including those specific to religious meal service, such as Kosher and Halal.
- Coordinate special requests for meal service assisting in the mobilisation of staff, equipment and facilities in accordance with Defence Force plans.
- Operate large-volume cooking equipment such as grills, deep-fat fryers, and barbeques.
- Overall stock management, including ordering of supplies, stock rotation, application of labels and dates, correct storage and handling, develop inventory control measures, ensure correct wastage practices, and coordinate stock takes.
- Support the implementation of Ventia’s Food Safety Program, this involves actively identifying hazards, employing appropriate controls, recording incidents in line with Company standards, and ensuring team members receive the appropriate training and comply with requirements.
- Preventive management of food safety hazards through the systematic application of HACCP controls.
- Check, record and sign-off on all shift cleaning schedules and documentation relating to incoming goods, food holding units and temperature probes.
- Ensure all areas of the kitchen are clean, sanitised, well-maintained and presentable.
About you:
- Australian recognised Commercial Cooking qualification – Cert III or higher.
- HACCP Level 3 certification.
- Demonstrated experience operating within a large commercial kitchen.
- An ability to work flexibly and adaptively in complex environments with multiple stakeholders.
- Exceptional customer service skills.
