Sous Chef


The Role 
Ventia are seeking a Sous Chef to join our Defence Base Services contract. Reporting to the Head Chef, this position will see you based at RAAF Base Pearce in Bullsbrook WA. In this role you will lead and manage overall back-of-house operations and all personnel involved in the production and delivery of food service within RAAF Pearce. You may also need to travel to other locations as required.

This position is a full-time permanent role, working a 9:5 Roster (9-days on, 5-days off).

The payrate for this position is $33.99 per hour + penalties.

To be considered for this position, you must be an Australian Citizen and willing to undergo a police check.

Key duties, but not limited to: 

  • Support the Head Chef in management of the overall preparation & delivery of meal services 
  • Verify that food products & presentation are prepared to serve in a timely manner 
  • Operate large-volume cooking equipment such as grills, deep-fat fryers, & barbeques 
  • Assume the role of Head Chef in their absence 
  • Ensure menu variations, allergen and religious requirements are followed 
  • Assist the Head Chef in overall stock management, including ordering of supplies, stock rotation, application of labels & dates 


Requirements: 

  • Commercial Cookery qualification 
  • Hazard Analysis and Critical Control Point (HACCP) Level 3 certification – Highly regarded  
  • Experience managing large commercial kitchens
